Texas Barbecue at Texas A&M University sponsors the Animal Science course ANSC 117, Texas Barbecue; workshops, Barbecue Summer Camp and Camp Brisket; and educational efforts like the BBQ Genius Counter.

Joining us to talk all things barbecue, will be Dr. Davey Griffin '79 '81 '89 and MacKenzie Chapman '22.

FEATURED SPEAKERS:

Dr. Davey Griffin is a professor, extension meat specialist, and a crucial member of the "barbecue team". Before returning to serve the university in the extension role, he worked in industry with Oscar Mayer Foods corp. He has been very involved with the meat judging team, coaching the '83, '84, and '86 teams. Dr. Griffin serves as a liaison between industry, commodity groups, and extension and academia. Dr. Griffin is very involved in the barbecue program, coordinating Camp Brisket, Summer Barbecue Camp, and Beef 101.

MacKenzie Chapman is a current PhD student studying meat science and food safety under the direction of Drs. Savell and Gehring. MacKenzie is originally from Battle Creek, Michigan, and completed her undergraduate degree at Oklahoma State University on an equestrian scholarship. After finishing her degree, she used her remaining eligibility to ride for Texas A&M's equestrian team, and completed her master's in beef breeding and genetics. MacKenzie served as the ANSC 117 Texas Barbecue Graduate TA this past fall. She loved to watch the students evolve throughout the semester, becoming more confident and engaged in learning.
